Male and female tapirs are called male and female tapirs. I have never heard
of them referred to as anything else. Bull and cow are terms for elephants,
hippos, cattle and other species but have not, to my knowledge, ever been
used for tapirs.
Babies are called calves, but adults are just dam & sire or male and female.

About the new question at the Tapir Talk Digest, at
least in Spanish, we say "tapir macho" and "tapir
hembra". I hope it is useful...
